This one is called Potluck Potatoes and is great for large dinners, picnics or other gatherings (which we hope to all be able to do by this summer!) with the following ingredients:
2 lbs. frozen hash browns (cubed potatoes, not shredded), thawed
¾ cup of melted butter
1 tsp. salt or to taste
½ cup of chopped onions
1 pint of sour cream
2 cups of grated cheddar cheese
1 can of cream of chicken soup
2 cups of crushed corn flakes
Combine hash browns, 1/2 cup butter, salt, pepper, onions, sour cream, cheese and soup. Pour this into a greased 9" x 13" baking dish. Mix the remaining ¼ cup butter and crushed corn flakes. Spread this mixture as a topping over the the potatoes. Bake at 350º for 45 minutes.
